Sandwiches are a summer staple—and quite the crowd pleaser. But when they’re made of dark chocolate cookies and ice cream, things really get interesting. We made these decadent cookies using the Pure Dark chocolate bar, which proved to be the perfect complement to Jeni’s ice cream, made with goat cheese and red cherries.

What you need:

2 cups dark chocolate (we used 4 Pure Dark bars)
2 T water
½ cup butter (1 stick), softened
1 cup sugar
½ tsp salt
2 large eggs
1 tsp vanilla extract
1 ¼ cups all-purpose flour
½ tsp baking soda
1 pint of Jeni’s Goat Cheese with Red Cherries ice cream

How you make the cookies:

Preheat oven to 350°F.

Melt chocolate and water in a bain-marie and stir until smooth. Set aside.

Cream sugar, salt, and butter in a mixing bowl. Beat in eggs and vanilla until smooth. Add melted chocolate and stir. Mix in flour and baking soda until combined.

Drop teaspoons of batter onto lined baking sheets. Bake 11 to 12 minutes or until tops are cracked and slightly crisp. Centers should be soft. Let stand 5 minutes, and then move to cooling racks.

How you make the sandwiches:

Once cookies are completely cool, separate them into pairs.

Using a small scoop, add ice cream to the center of a cookie. Let sit for a few minutes to soften, then add the top and gently press cookies together.

Place finished sandwiches in freezer for approximately 30 minutes to harden, then serve.

Recipe makes a dozen 3” sandwiches—and plenty of extra cookies for a midnight snack.
