It’s true: s’mores are the ultimate summer indulgence. Best served beside the fire, the ooey-gooey melty chocolate and marshmallow, sandwiched between graham crackers isn’t easily matched. In fact, it might be one of the best things about the summer season. But these s’mores bars come very close—and you can enjoy them all winter long.
What you need:
¾ cup graham cracker crumbs
1 ¼ cups all-purpose flour
½ cup packed brown sugar
¼ cup granulated sugar
¼ tsp baking soda
½ cup unsalted butter, softened
¼ tsp salt
1 large egg
1 tsp vanilla extract
One jar (7 oz) of marshmallow crème
8” x 8” glass baking dish
How you make it:
Preheat oven to 350 degrees. Grease baking dish, or line with parchment paper for easy removal.
In a bowl, blend together the flour, graham cracker crumbs, baking soda, and salt using a whisk. Set aside.
Using the paddle attachment in a stand mixer bowl, blend together brown sugar, granulated sugar, and butter until smooth. Add egg and vanilla extract.
Slowly add dry ingredients until blended completely.
Divide dough in half, pressing one half into the bottom of the baking dish evenly. Place chocolate bars on top, side by side. Top chocolate with an even layer of marshmallow fluff.
Using remaining dough, pull golf ball sized pieces and flatten into squares to the top, ensuring fluff is completely covered.
Bake in preheated oven for 25 to 30 minutes.
Let cool on wire rack before cutting into squares and serving to anxiously awaiting loved ones.
